Mahi Bowl with Coconut Rice

This was a super easy last minute dinner that was a huge hit!

Mahi with cucumber salsa over black beans and coconut rice.


Beans were cooked straight out of the can, nothing fancy there. For the coconut rice I just substituted half the water in the rice cooker with lite coconut milk. The salsa was a simple mix of diced cucumbers, tomatoes, red onion, cilantro, lime juice and rice vinegar. Lastly, the mahi was coated in blackened seasoning and pan seared. Add it all in a bowl and it was a light refreshing dinner for a warmer spring night. Not a fish eater? You could easily swap out the fish for chicken instead
