Gluten Free Pork Ramen

I don’t know about you guys but I love myself a good bowl of ramen. It’s one of my favorite dishes hands down. I love that while it has traditional elements it’s a little different everywhere you eat it and it really can be anything you want it to be but at it’s core it’s a big bowl of hot soupy noodles and who does’t love that?

A few years back I had the opportunity to travel a ton and got to hit 3 major cities in 6 months and ate ramen in every one of them. The best bowl of ramen is something I’m continually on the search for and I crave. So needless to say being quarantined for 2 months got those cravings running at an all time high so I decided to tackle this one for myself and I have to say it wasn’t half bad.

I don’t measure when I cook typically so the recipe below is a rough guestimate of what went in my bowl. Again though, ramen is whatever you want to make it. At the core: a good broth, some tasty meat, a rainbow of veggies, some tasty seasoning, and a perfectly cooked egg, and your good to go.

Gluten Free Pork Ramen

Ingredients:

For Pork
  • 1 lb pork lion
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon garlic, chopped
For Ramen
  • 2 teaspoons sesame oil
  • 2 cups mushrooms, sliced
  • 1/2 onion, sliced
  • 2 cloves garlic, chopped
  • 1 teaspoon fresh ginger
  • 1 carrot, shredded
  • 3 scallions, chopped
  • 1 tablespoon hoisin sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon hot chili oil
  • 4 cups chicken broth
  • 1 package noodles ( I used millet noodles to make it gluten-free)
  • 1 teaspoon sesame seeds
  • 1 tablespoon cilantro 
  • 2 eggs
  • salt to taste

Instructions:

For Pork
  1. Mix together garlic, soy sauce and hoisin sauce in a bowl
  2. Thinly slice pork and add to the bowl to marinate for 15 minutes. 
  3. Once marinated add to hot skillet and saute 5 minutes until pork is cooked thru. 
For Ramen
  1. Heat sesame oil in a large pot and saute garlic, onion, mushrooms, and ginger until onions are translucent. 
  2. Add in broth, hoisin, soy sauce, and chili oil and bring to a bowl. 
  3. Once boiling add in noodles and cook to package instructions. 
  4. In a separate pan fry egg if desired. 
  5. To serve add brother and noodles to a bowl, top with pork, scallions, carrots, sesame seeds, cilantro and egg. 

Notes:

If you like things a little more on the spicy side you can up the hot chili oil or add in sriracha or crushed red pepper flakes. You can also add in any vegetables of your choice such as broccoli, boy choy, celery, towards the end of the noodles being cooked.
