Gluten Free Waffles
Gluten-free is a hard sell for most people when it comes to taste and texture but this recipe is as good as the real stuff, I promise. It’s officially approved by my gluten-loving husband and my food-loving toddler. This recipe is a modified version from The How Can It Be Gluten Free Cookbook. It’s one of my favorite gluten-free cookbooks, however, my only beef with it is that a lot of their recipes contain sugar which I just omit. I love this recipe though because it’s super simple and versatile. Some weekends I make just plain waffles and sometimes I will add in blueberries or bananas, I’ve even added pumpkin for a fall version.
Lastly, I can’t share a waffle recipe with you without sharing my favorite waffle maker. We have a Cuisinart, nothing fancy. Easy to clean, easy to store, easy to use and available here on amazon prime.
Gluten Free Waffles
Ingredients
- 2 2/3 cups King Arthur Gluten-Free Flour Blend
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1 1/4 cups plain Greek yogurt
- 1 cup milk
- 3 large eggs
- 2 tablespoons unsalted butter, melted
Instructions
- Heat waffle iron according to manufacturers instructions
- Whisk flour blend, salt, and baking soda together in a medium bowl. In a separate bowl, whisk together the eggs, yogurt, milk, and butter until combined. Whisk egg/yogurt mixture into flour mixture thoroughly until the batter has thickened and no lumps remain about 1 minute.
- Add batter to waffle iron and cooking accordingly.
- You can use 1 3/4 cups buttermilk in place of Greek yogurt and milk
- Substitute regular milk for almond or soy
- Mix in fresh fruit to batter such as blueberries or bananas
