Gluten Free Almond Chia Granola
I remember the first time I made granola from scratch I was blown away at how easy it was. While I love a good granola the store-bought ones are typically filled with sugar so making my own allows me to control exactly what goes into it. I love using the almond extract because it gives it a sweeter taste without added sugar and the honey gives it just enough sweetness. The chia seeds add not only some antioxidants, fiber, and protein but also the coveted omega 3 fatty acids. So for all that nutrient goodness, get baking!
Have some fun with it and add different nuts and dried fruit to match your favorite tastes, just be sure to stay close to the kitchen, granola goes from cooked to smoke detector burnt really quick.
Gluten Free Almond Chia Granola
Ingredients:
- 3 cups gluten-free oats
- 1 egg
- 1 tablespoon chia seeds
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup sliced almonds
- 1/2 tablespoon cinnamon
Instructions:
- Preheat oven to 350 degrees.
- Mix all ingredients together until the oats are well coated.
- Line baking sheet with parchment paper and spread oat mixture on paper in an even layer.
- Bake in oven 10 minutes. Remove baking sheet and stir oats to brown evenly and bake another 10 -15 minutes.
- Allow to cool and store in an airtight container for a week.
Notes:
This granola makes a great grab and go snack or breakfast. I love it in a bowl with milk like cereal or with Greek yogurt and fruit.
